Oven Rack Buying Guide

How to Choose the Right Roll-In Oven Rack for Your Bakery Operation

Selecting the right oven rack is one of the most important equipment decisions a commercial bakery can make. Oven racks directly affect baking consistency, oven utilization, labor efficiency, product quality, and overall production capacity. A properly designed rack can remain in service for decades, while an improperly selected rack can create ongoing maintenance issues, production bottlenecks, and product quality problems.

Whether you're purchasing your first roll-in rack oven system or expanding an existing operation, understanding the key factors involved in oven rack selection will help ensure the best return on investment.

At Magna Industries, we manufacture heavy-duty roll-in oven racks designed for commercial bakeries, wholesale bakeries, food processors, commissaries, supermarkets, and institutional food service operations. This guide will help you select the best oven rack for your application.

Why Oven Rack Selection Matters

The oven rack is more than a storage device.

It directly impacts:

Baking Consistency

Airflow Performance

Product Quality

Oven Capacity

Labor Efficiency

Equipment Durability

Production Throughput

Maintenance Costs

A properly selected rack improves both production efficiency and product consistency.

Step 1: Identify Your Oven Manufacturer

The first step is determining which oven the rack will be used with.

Common manufacturers include:

Baxter

LBC

Revent

MIWE

Sveba Dahlen

Polin

Werner & Pfleiderer

Gemini

Bongard

Rackmaster

Each oven manufacturer uses specific rack dimensions and configurations.

Step 2: Verify Rack Dimensions

Accurate dimensions are critical.

Key measurements include:

Overall Rack Height

Overall Width

Overall Depth

Pan Slide Width

Pan Slide Depth

Bottom Clearance

Wheel Height

Even small dimensional differences can affect oven performance and compatibility.

Common Bakery Oven Rack Sizes

Some of the most common configurations include:

18" x 26" Pan Capacity

18" x 30" Pan Capacity

23" x 23" Pan Capacity

460 mm x 660 mm European Pan Capacity

Custom Pan Sizes

Always verify pan dimensions before ordering.

Step 3: Determine Required Pan Capacity

Capacity directly affects production output.

Common capacities include:

10 Pan

15 Pan

18 Pan

20 Pan

30 Pan

36 Pan

The ideal capacity depends on:

Production Volume

Product Type

Oven Capacity

Facility Workflow

Higher capacity is not always better if airflow becomes restricted.

Understanding Slide Spacing

Slide spacing affects both capacity and product compatibility.

2-Inch Slide Centers

Common for:

Cookies

Flatbreads

Sheet Cakes

Thin Products

Provides maximum pan capacity.

3-Inch Slide Centers

One of the most versatile options.

Ideal for:

Consistent Fabrication Quality

Poor welds are one of the most common causes of rack failure.

High-Temperature Caster Selection

Casters are among the most critical oven rack components.

Oven environments expose casters to:

Heat

Moisture

Thermal Cycling

Heavy Loads

Continuous Movement

Proper caster selection is essential.

Phenolic High-Temperature Casters

The most common bakery solution.

Benefits include:

Heat Resistance

High Load Capacity

Long Service Life

Load Capacity Considerations

Rack load ratings should accommodate:

Product Weight

Pan Weight

Transportation Loads

Dynamic Forces

Never select a rack based solely on static loads.

Ergonomics and Mobility

Oven racks move throughout production.

Consider:

Rolling Resistance

Caster Quality

Weight Distribution

Handle Design

Operator Effort

Proper ergonomics improve productivity and reduce injuries.

Cleaning and Sanitation Requirements

Sanitary design improves food safety and maintenance.

Look for:

Smooth Surfaces

Sealed Tubing

Continuous Welds
